Ingredients

500g Heavy Cream For the chocolate ganache
400g Chocolate Chips semi-sweet
50g Saltwinds Coconut Coffee brewed
250ml Heavy Cream For the whipped cream
1 cup Water
1 tbsp Powdered Sugar
1 tbsp Saltwinds Coconut Coffee ground
2 Eggs
1/2 cup Milk
1 tsp Vanilla
1 tsp Sugar
1/4 tsp Salt
1 cup Flour sifted
1/2 cup Water
2 tbsp Butter melted

Indulge in these homemade crepes filled with luscious flavours of coconut and coffee, taking your taste buds on a tropical escape. First the crepes are generously filled with a velvety ganache infused with Saltwinds Coconut Flavoured Coffee. Finally, a dollop of coconut coffee whipped cream adds lightness to the dish and an extra burst of coconut and coffee flavours.

To Make Chocolate Coffee Ganache:

Put heavy cream into a saucepan over medium heat and add Saltwinds Coconut Flavoured Coffee. Let it simmer for 15-20 minutes.

Remove from heat then add the chocolate chips.

Use a spatula to stir. Keep stirring until the semi-sweet chocolate is completely melted.

For the coconut coffee whipped cream:

Boil the cup of water and add the Saltwinds coffee grounds to it.

Whisk heavy cream using an electric mixer and add powered sugar.

Gradually add the Saltwinds coffee. Continue to mix until soft peaks form.

To make the crepes:

In a large bowl, combine eggs, milk, vanilla, sugar, and salt. Whisk together.

Gradually add flour, water, and melted butter and continue to whisk.

Scoop batter onto a griddle heated to medium heat, about 30ml.

Swirl into a thin layer.

Cook for 30 seconds on each side

Fill crepes with chocolate coconut ganache, chocolate coconut whipped cream, and any fruits of your choice.

Top with more coconut coffee ganache and powdered sugar.
