75g Saltwinds' Maple Flavoured Coffee
1500 Filtered water
454g (1 block) Unsalted butter
2 tbsp Maple syrup
2 tbsp Saltwinds Maple Coffee Reduction
1 pinch Salt
5 pieces Scallop Can be substituted for chicken or shrimp
1 tbsp Cooking oil
1 tsp Salt
1 tsp Pepper
4 cups Mixed greens Optional

Maple Coffee-infused Butter

1. Brew a pot of Saltwinds Maple-flavoured coffee using 75 grams of medium-coarse grinds and 1500 millilitres of filtered water.
2. Transfer your freshly brewed Saltwinds maple-flavoured coffee to a small saucepan, boil, and reduce to a simmer.
3. Simmer the coffee on medium-high heat until it is reduced to a syrup consistency. (It might take up to an hour.)
4. Let it cool.
5. In making the butter, prepare the mixer bowl and add the Saltwinds Maple coffee reduction, maple syrup, and salt to the unsalted butter.
6. Cream the butter until the flavour is mixed thoroughly. Refrain from mixing, or it will separate.

Pro Tips:
If you intend to use the Maple coffee-infused butter for cooking, it's ready to use!
If you intend to use this butter for the side of dinner rolls, whip the butter with the whip attachment and serve with sea salt flakes.


Cooking the Scallop

1. Pat dry the scallops using a paper towel and season them with salt and pepper.
2. Heat the pan using medium heat. Add the cooking oil simultaneously.
3. Once the pan is heated, add the five scallops.
4. Preheat the oven to 350F.
5. Turn the scallops after 20-30 seconds on each side or until the desired colour is achieved.
6. Add the maple coffee-infused butter to the pan and baste the scallop.
7. Put the pan in the oven to cook the scallops for 30 seconds to a minute.
8. Suppose you want to enhance the flavour of the scallop; add a pinch of butter to the scallop.
