3 1/2 shots of espresso Saltwinds' Ocean Fresh Coffee
240ml Soy sauce
175ml Maple syrup
1 tsp Xanthan gum powder or corn starch
1 tsp Ground ginger
160g Cashews
8pc White shrimp remove tails beforehand
8pc Pineappple sliced
1 Lemon wedge
Salt
Parsley

SALTWINDS OCEAN FRESH CASHEW SAUCE

1. WHISK GORUND GINGER AND XANTHAM GUM OR CORN STARCH IN SOY SAUCE.
2. ADD CASHEWS, SOY SAUCE, MAPLE SYRUP AND 3 1/2 SHOTS OF OCEAN FRESH COFFE ESPRESSO AND BLEND FOR 1-2 MINUTES.
3. SERVE AT ROOM TEMPERATURE.

PINEAPPLES AND SHRIMPS

1. USE A QUARTER OF THE OCEAN FRESH CASHEW SAUCE TO MARINATE SHRIMP FOR 5 MINUTES.
SET ASIDE ANOTHER QUARTER OF THE SAUCE TO USE AS A DIP.
2. BUILD YOUR SKEWERS WITH SHRIMPS AND PINEAPPLES.
3. GRILL SHRIMPS AND PINEAPPLES FOR 5 MINUTES ON HIGH HEAT.
4. POUR CASHEW SAUCE INTO A MARTINI GLASS.
5. PLACE THE SKEWERS ON THE RIM OF THE GLASS.
6. GARNISH WITH CHOPPED PARSLEY AND LEMON WEDGE.
