Wet Ingredients

In the bowl of a standard mixer fitted with a paddle attachment, cream together the butter, brown sugar and sugar on a medium-high setting for 2-3 minutes until well combined. Scrape down the side fo the bowl, add the egg, vanilla extract, coffee extract and beat for 7-8 minutes on medium-high speed until combined.

Dry Ingredients

In a separate bowl, add the flour, ground coffee, milk powder, salt, baking powder and baking soda and mix together.

Add dry ingredients

With the stand mixer running at 1/2 speed, add the dry ingredients to the wet ingredients. Paddle on low speed until just combined. No longer than 1 minute. Do not overmix or you will risk overmixing the dough. Scrape down the sides of the bowl with a spatula.

(Optional) Add custom ingredients

With the stand mixer running at 1/2 speed add in your favourite mix-ins until just combined. No longer than 1 minute, do not overmix!

Spoon and cook

Using Mrs.Goguen's favorite cookie scoop (or a tablespoon), scoop the dough onto a parchment lined sheet pan and place a chocolate covered coffee bean in the center of each cookie. Place in freezer to chill for up to 3 days. Bake at 350F for 8-10mins. (Remember to rotate the pan at the 5 min mark for an even bake).
