Adjust Servings:
1/2 Cup Saltwinds Vanilla Coffee You may use any other flavours of coffee such as hazelnut, but I recommend the vanilla flavour for this recipe!
1 Cup dark chocolate Try to pick dark chocolate with a high level of cacao, anywhere from 70% - 80%, if you prefer sweet chocolate, 56% is a good choice!
4 Eggs Egg whites Let your egg whites sit at room temperature for about 30 minutes before usage, this will help obtain the ideal consistency when beating your eggs!
1 Tablespoon Maple syrup A little goes a long way! This will add some nice subtle flavouring to the mousse!
Berries These can be any berries of your choice but I’d recommend cherries or strawberries to pair nicely with the vanilla flavour!

Brew your Saltwinds vanilla coffee

Place the chocolate in a small pan over low heat. When the chocolate starts melting, immediately pour in the maple syrup and the coffee.

Beat

Beat your egg whites until stiff, meaning until peaks stand straight up when you lift your beater from the mixture (about 5 minutes on medium speed).

Combine

When the white foam is ready, immediately combine it with the chocolate-coffee mixture. Start gently by folding small amounts of the chocolate mixture into the beaten egg whites with a spatula. It will give the foam the proper time to temper and adjust to the chocolate base.

Divide the mousse equally into small cups, ramekins, or serving bowls. Chill in the refrigerator for at least 30 minutes or let sit overnight.
